This tasty recipe vegetarian chili is perfect for a potluck lunch.
1 tablespoon vegetable oil
1 cup chopped onion
3 / 4 cup carrots, chopped
3 cloves garlic, minced
1 cup green bell pepper, chopped
1 Cup red bell pepper, chopped
3 / 4 cup chopped celery
1 tablespoon chili powder
1 1 / 2 cups fresh mushrooms, chopped
1 (28 ounce) can whole peeled tomatoes with liquid, chopped
1 (19 ounce) can beansliquid
1 (11 ounce) can whole kernel corn, undrained
1 teaspoon ground cumin
1 1 / 2 teaspoon dried oregano
1 1 / 2 teaspoons dried basil
Directions
In a large saucepan heat the oil over medium heat.
Add the onions, carrots and garlic, sauté until vegetables are tender. Stir in green pepper, red pepper, celery and chili powder. Cook the vegetables for 6 minutes or until tender.
Stir the mushrooms and cook for 4 minutes. Mixtomatoes, beans and corn. Add the cumin, oregano and basil. Bring to a boil, reduce heat to medium-sized. Cover and simmer for 20 minutes, stirring occasionally.

1 tablespoon olive oil
1 / 2 medium onion, chopped
2 bay leaves
1 teaspoon ground cumin
2 tablespoonsoregano

2 stalks celery, chopped
2 green peppers, chopped
2 jalapeno peppers, chopped
3 cloves garlic, minced
2 (4 ounce) cans green chili pepers, cut into small pieces
2 (12 ounce) packages vegetarian burger crumbles
3 (28 ounce) cans whole peeled tomatoes, crushed
1 / 4 cup chili powder
1 tablespoon ground black pepper
1 (15 ounce) can beans, drained
1 (15 ounces) chickpeas,drained
1 (15 ounce) can beans blacks
1 (15 ounce) can whole kernel corn
Directions
In a large saucepan, heat the olive oil over medium heat.
Add the onion, cumin, oregano, bay leaf and salt. Cook until the onions are tender. Add the celery, green pepper, jalapeno pepper, garlic and green chilli peppers, heat thoroughly.
Stir in veggie burger crumbles, reduce heat to a minimum. Cover the pot and cook for 5 minutes.
Mixtomatoes. Add the chili powder and pepper. Stir in beans, chickpeas and beans blacks. Bring to a boil, reduce heat to low and simmer for 45 minutes.
Add corn and cook for another 5 minutes.

This is a quick and delicious low-fat chili recipe that chili lovers will devour.
1 (28 ounce) can diced tomatoes with juice
1 small onion, diced
1 (15 ounce) can white beans, drained
1 (15 oz)can chili beans, with liquid
1 (1.25 ounce) package reduced sodium taco seasoning mix
1 (1 oz) package ranch dressing mix
1 (12 ounce) package vegetarian burger crumbles
1 (8 ounce) package cheddar cheese, shredded (optional)
Directions
In a large pot, add tomatoes, onion, white beans, beans, chili, pepper, taco, ranch dressing mix and cook over medium heat. Bring to a boil. Reduce the heat to a minimum.
Stir in the vegetarian burger crumbles and continue cookinguntil fully heated. Sprinkle cheese on top before serving.
