As the old saying goes, "Summertime" and "Livin 'is easy. One of the easiest things about summer is a good recipe salad. On warm days, when appetites wane, when you need a simple element picnic, or simply do not want to heat the house, the salad is often the perfect solution. Here we offer some ideas to try out different salads. Perhaps one of them will become a new favorite in your home. Try red and green tomatoes for a nice salad and a tasty salad as part of a lightmeal. For salad more substantial, which could actually serve a light meal, try this pasta salad with ham.
RED AND GREEN TOMATO SALAD
1st / 2 cup olive oil
3 tablespoons red wine vinegar
2 tablespoons lemon juice
1 clove garlic, minced
1 / 2 teaspoon ground cumin
1st / 8 teaspoon black pepper
3 medium red tomatoes, diced
3 medium green tomatoes, diced
1 medium red onion, thinly sliced and separated into rings
1 tablespoon dried basil
In a smallbowl or a jar with a lid, combine oil, vinegar, lemon juice, garlic, cumin, pepper, mix well. Refrigerate. In a large shallow bowl, combine the tomatoes, onion, and basil. Thirty minutes before serving, add the sauce and stir.

PASTA SALAD WITH HAM
4 cups spiral pasta cooked, chilled
1 / 2 cup apple cider vinegar
1 / 2 cup extra-virgin olive oil
1 teaspoon Splenda granular
1 / 2 teaspoon salt
1 / 2 teaspoon freshly ground blackpepper
2 cups thin julienne of ham
1 1 / 2 cups fresh broccoli florets
1 cup carrots, thinly sliced
1 med red bell pepper cut into strips
Combine the vinegar with olive oil, Splenda, salt and pepper in a jar with an airtight seal. Shake vigorously to mix well. In a bowl, combine the macaroni with the florets of broccoli, carrots, bell pepper and ham. Add the sauce and stir to coat well. Cover bowl, refrigerate and chill while flavorsblend.
